If you decide to go Paleo or even just reducing your wheat/grain consumption, you become creative. I use to just go for a sandwich or a wrap but not anymore.

Well, sandwiches with bread are out of the question. So that got me thinking what normally goes in a sandwich? Lunch meat, tuna fish salad...oh, yea! Tuna fish!
So I came up with tuna fish salad on cucumber chips!
Ingredients:
Half cucumber, peeled and sliced
Tuna fish (I used a pouch)
2 tbsp of red onion, chopped
2 tbsp of celery, chopped
2 tbsp of artichoke hearts, chopped
Juice of a small lime
3-4 basil leaves, chopped
1 tbsp of raw sunflower seeds
Salt and pepper to taste
Half cucumber, peeled and sliced
Tuna fish (I used a pouch)

2 tbsp of celery, chopped
2 tbsp of artichoke hearts, chopped

Mix all ingredients together, except the cucumber. Top all cucumber chips with tuna mixture.
